Today the Alligators collected garlic scapes from the garden and used them to make a yummy dip.  (The Bats will do this on Friday.) Several of the children really liked it and asked that I post the recipe. Here it is:

1/3 cup sliced garlic scapes (3 to 4)

1 tablespoon freshly squeezed lemon juice

1/2 teaspoon sea salt

1 can (15 oz) cannellini beans (white beans), rinsed and drained

1/4 cup olive oil

 

1. In a food processor, process garlic scapes with lemon juice and salt. (I had the students cut up the scapes into one inch pieces before adding them to the processor.) Add cannellini beans and process to a rough puree.

2. With motor running, slowly drizzle olive oil through feed tube and process until fairly smooth. If necessary, pulse in 2 or 3 tablespoons of water until mixture is the consistency of dip.

Serve with pretzels, chips or vegetables.
